Mexican wedding cakes


These are really easy to make and delicious!
Cream together :-
30z Butter
2oz Icing Sugar
now add :-
Pinch of Salt
vanilla extract
6oz S/R Flour
2oz chopped Walnuts or Pecans
Roll into small balls and bake on a tray for 15 minutes at gas 5 or 350f
when cooked shake in Icing sugar whilst still warm and repeat twice more

I've made those, they're also called Russian tea cakes. I make them at Christmas...they're Nick's favourite, mine too. They are melt-in-your-mouth good!
